Who doesn’t like Thanksgiving leftovers? A Clemson University Cooperative Extension Service food-safety agent says practicing safe food handling of leftovers is extremely important. Adair Hoover says don’t allow food to stand at room temperature for more than two hours. Prepare your refrigerator in advance. Cool down hot foods before refrigerating and don’t overload the refrigerator. Plan to eat leftovers within four days. In addition, make sure that you reheat food properly.
